INGREDIENTS

  • 4 boneless, skinless chicken thighs, sliced
  • 1 cup all-purpose Flour
  • 1/2 tablespoon Garlic salt
  • 1/2 tablespoon paprika
  • 1/4 tablespoon cayenne pepper
  • 1/2 teaspoon black pepper
  • 2 large eggs
  • 1 cup buttermilk
  • 1 tablespoon hot sauce
  • 2 cups cornflakes
  • Salt, to taste
  • Pepper, to taste
  • 1/3 cup unsalted butter, melted
  • 1/2 cup hot sauce (for buffalo sauce)
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup buttermilk or regular milk
  • 1 teaspoon dried dill weed
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon dried chives
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon finely cracked pepper
  • 2 teaspoons freshly squeezed Lemon juice

DIRECTIONS

  1. In a shallow dish, mix all-purpose flour, garlic salt, paprika, cayenne pepper, and black pepper.

  2. In another shallow dish, whisk together eggs, buttermilk, and hot sauce.

  3. Use a blender or a plastic bag to crush cornflakes into small pieces. Place them in a third shallow dish.

  4. Season chicken thighs with salt and black pepper. Dredge chicken in flour mixture, dip it in egg mixture, coat again in flour mixture, dip chicken in egg mixture, and coat in cornflake mixture, pressing it into the chicken to adhere.

  5. In a medium saucepan, melt unsalted butter and mix it with hot sauce.

  6. Heat oil in a large skillet over medium-high heat. Fry chicken for 4-5 minutes or until golden brown. Drain on a wire rack or paper towels to remove excess oil.

  7. Coat chicken evenly in buffalo sauce.

  8. In a small bowl, mix together mayonnaise, sour cream, buttermilk or regular milk, dried dill weed, dried parsley, dried chives, onion powder, garlic powder, salt, finely cracked pepper, and freshly squeezed lemon juice.

  9. Toast the hamburger buns.

  10. Build the sandwich with a chicken thigh covered in buffalo sauce, crispy bacon, pepper jack cheese, pickles, and a spoonful of homemade ranch dressing. Serve and enjoy your delicious Buffalo Chicken Sandwich!

Notes

Increase the amount of hot sauce in egg mixture and buffalo sauce, to make it spicier.
