INGREDIENTS

  • 1 tbsp water
  • 2 lbs pork shoulder cut into 3-centimeter cubes
  • A single shallot
  • 1 ½ tbsp fish sauce
  • ¼ tsp white pepper
  • 2 minced garlic cloves
  • ½ cup brown sugar, tightly packed
  • Finely chopped green onions
  • Red chilis

DIRECTIONS

  1.  Start by putting both sugar and water in a  large pot over medium heat

  2. Stir the mixture until it is combined, wait for the sugar to melt and caramelize, then introduce the other ingredients

  3. After mixing again, adjust the heat, so the pot is vigorously bubbling. A medium heat should do the trick

  4. Let it simmer for about one and a half hours without a lid, stirring now and again

  5. After the liquid reduces a bit and the pork becomes tender, stir the mixture once again to ensure browning

  6. Once all the liquid has evaporated, the pork is now ready.

Notes

We recommend serving this dish over some rice and sprinkle some red chili and green onions for garnishment. The serving size is enough to feed about four people.
