- 4 sweet potatoes, cut in half
- Chicken thighs, cut into cubes
- 1 ripe avocado
- 1 lemon juice
- 2 cloves garlic, minced
- Salt and pepper, to taste
- Taco seasoning
- Fresh cilantro, chopped
- Valentina’s Hot Sauce
- Lime wedges for garnish
Preheat your oven to 400°F (200°C). Place the sweet potato halves face down on a baking sheet and bake for 20 minutes. After 20 minutes, flip the sweet potatoes and continue baking until they are soft when poked with a fork and slightly browned.
While the sweet potatoes are cooking, prepare the chicken. Cook the cubed chicken thighs in a pan over medium heat until thoroughly cooked and lightly browned. Season the chicken with taco seasoning.
In a bowl, mash the ripe avocado. Add in the lemon juice, minced garlic, salt, and pepper. Mix well to combine.
Once the sweet potatoes are done, let them cool slightly. Then, top each sweet potato half with the cooked chicken, a dollop of mashed avocado, a sprinkle of fresh cilantro, and a drizzle of Valentina’s Hot Sauce.
Serve the Taco Stuffed Sweet Potatoes with a squeeze of fresh lime juice for added zing. Enjoy this flavorful and hearty meal!
For the best flavor, use fresh lime juice and high-quality taco seasoning. Adjust the amount of Valentina’s Hot Sauce as per your heat preference.
