INGREDIENTS

  • 2 1/3 Gluten Free Baking Flour
  • 1 tbsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp allspice
  • 1/8 tsp ginger
  • 1/2 tsp kosher salt
  • 2 apples, peeled and core removed, chopped
  • 1 cup sugar
  • 1/3 cup brown sugar
  • 3/4 cup butter, room temp
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup walnuts, chopped
  • 1/2 cup applesauce
  • 3/4 cup milk

DIRECTIONS

  1. Preheat the oven to 350 degrees.

  2. Spray 8" cake pans with nonstick baking spray (will fit a 9x13 too). 

  3. In a mixing bowl mix the sugars, egg and butter for 3 mins. Add the milk, applesauce and vanilla. Add all of the dry ingredients.

  4. Fold in the walnuts and apples. Bake until the toothpick comes out clean approx 30-35 minutes.

  5. Tops will be lightly browned. Cool completely.

Notes

Ingredients Frosting

  • 8oz cream cheese
  • 1/2 cup of butter
  • 3 cups powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup caramel (note on making your own below)
  • 1/2 tsp cinnamon

Mix all the ingredients together in a bowl until smooth and top the cooled cake. NOTE: making an easy caramel. Add sweetened condensed milk to a stock pot and cook over med/low heat until light golden brown. Let cool some. Enjoy!
