  • 3 lbs chicken wings
  • 3 tbsp All-purpose flour
  • 3 tsp garlic powder
  • 2 tsp cayenne pepper
  • 1 1/2 tsp paprika (smoked paprika works well too)
  • Salt and pepper to taste


  1. In a large bowl, mix all dry ingredients.

  2. Add the chicken wings and gently mix until coated.

  3. Cover this mixture and chill in the fridge for approximately 30 minutes.


Ingredients for Buffalo Sauce

  • 1/2 cup hot sauce
  • 2 sticks or 1 cup of butter
  • 2 TBS light brown sugar
  • 2 TBS honey
  • 1 TBS white wine vinegar
  • Salt and pepper to taste

Prepare the Buffalo Sauce

  1. In a pan, mix all buffalo sauce ingredients over medium-low heat.
  2. Stir frequently until the mixture comes to a simmer (small bubbles with steam at the surface).
  3. Once the sauce starts simmering, immediately take it off the heat. Set it off to the side to cool to room temperature.

Prepare the Blue Cheese Sauce

  1. Begin by melting butter in a saucepan over medium-low heat.
  2. Once the butter melts, make a roux by adding the flour, stirring with a wooden spoon until combined.
  3. After incorporating the flour, stir in your milk of choice in a slow, gradual stream. Keep stirring until the mixture starts thickening.
  4. Bring the mixture to a simmer, stirring occasionally to prevent the sauce from sticking to the pan and burning.
  5. When the sauce reaches a simmering point, remove it from the heat.
  6. Begin adding the blue cheese in small portions, stirring until incorporated before adding more.
  7. Next, add the sour cream, mixing until combined.
  8. Season with salt and pepper to taste.
  9. Place the sauce in a container, and put it in the fridge to cool.

Cook the Buffalo Wings

  1. Light a charcoal grill or turn your gas grill on medium.
  2. Place your wings on the rack and cook for 10-15 minutes, rotating them halfway through.
  3. After 15 minutes, add the wings to your buffalo sauce bowl, tossing with tongs to coat.
  4. Put your wings back on the grill, cooking for an additional 10-15 minutes, or until fully cooked. Rotate the wings occasionally, adding more buffalo sauce if desired.

Serve your buffalo wings hot off the grill with the blue cheese sauce.

Tips and Variations

If you do not own a grill, make these wings in the oven instead! Preheat your oven to 350 degrees Fahrenheit. Lay the wings across a baking tray, and cook for 15-20 minutes. Add the buffalo sauce to the wings, then cook for an additional 15 minutes, or until fully cooked.
