Rainbow Chicken

This dish packs a flavorful punch with the combination of juicy chicken thighs marinated in herbs and spices, and crisp bell peppers. Try Rainbow Chicken for your next dinner party or weekday meal!

  • 1 courgette, diced
  • 1 tomato, diced
  • 1 onion, diced
  • 1 yellow pepper, diced
  • 1 block of cheddar cheese, grated
  • 3 chicken breasts
  • 1 bottle of beer
  • olive oil as needed
  • salt and pepper to taste
  • pesto sauce for dressing


  1. Cut the courgette, tomato, onion, pepper and cheese into small slices.

  2. Make several slits into each chicken breast (without cutting all the way through).

  3. Stuff the slits with vegetables and cheese.

  4. Heat oil in a pan over medium-high heat for 2 minutes then add the chicken breasts and brown on both sides.

  5. Pour beer over the top and sprinkle some more cheese on top before covering the pan with another pan or lid.

  6. Cook/bake for 20 - 25 minutes or until the chicken is tender.

  7. When done cooking dress with pesto sauce and enjoy!


Feel free to add more vegetables or substitute veggies if desired.
