INGREDIENTS
- pulled pork
- 1 pineapple, diced
- 1 Jalapeño, diced (seeds removed)
- chopped cilantro
- 1/2 red onion, diced
- pinch of salt
- 3 limes for juice
- Taco size tortilla
- 8 oz cheddar cheese, grated
- 8 oz monterey cheese, grated
- 1 cup queso dip
- small cup BBQ sauce

Preheat your oven to 400 degrees Fahrenheit.

Dice one medium fresh pineapple, half of one red onion, and one jalapeno (seeds removed).

Chop fresh cilantro.

In a bowl, mix together the diced pineapple, red onion, jalapeno, and cilantro. Add the juice from three limes and a pinch of kosher salt. Mix well and set aside.

Grate 8 ounces of cheddar cheese and 8 ounces of Monterey cheese.
