INGREDIENTS

  • pulled pork
  • 1 pineapple, diced
  • 1 Jalapeño, diced (seeds removed)
  • chopped cilantro
  • 1/2 red onion, diced
  • pinch of salt
  • 3 limes for juice
  • Taco size tortilla
  • 8 oz cheddar cheese, grated
  • 8 oz monterey cheese, grated
  • 1 cup queso dip
  • small cup BBQ sauce

DIRECTIONS

  1. Preheat your oven to 400 degrees Fahrenheit.

  2. Dice one medium fresh pineapple, half of one red onion, and one jalapeno (seeds removed).

  3. Chop fresh cilantro.

  4. In a bowl, mix together the diced pineapple, red onion, jalapeno, and cilantro. Add the juice from three limes and a pinch of kosher salt. Mix well and set aside.

  5. Grate 8 ounces of cheddar cheese and 8 ounces of Monterey cheese.

  6. Cut your tortillas in half.

  7. Assemble your quesadilla ring by layering cheese, pineapple salsa, pulled pork, and BBQ sauce over each tortilla half.

  8. Create a ring shape by placing the tortilla halves around a baking sheet. Assemble in two layers and add more cheese to each layer.

  9. Bake for 20 minutes or until the cheese is melted and bubbly.

  10. Serve with queso dip and enjoy!

Notes

You can also substitute the pulled pork with shredded chicken or beef. Serve with sour cream, guacamole, and salsa for dipping.
