  • 4 lbs. chuck roast, cut into 1x1 cubes
  • 1 cup Coca-Cola
  • 1 cup Bourbon
  • 1 tbsp. salt
  • 1 tbsp. black pepper
  • 1 tbsp. smoked paprika
  • 1 tbsp. garlic powder
  • 1 tbsp. onion powder
  • 1/2 cup beef tallow
  • 1/2 cup BBQ sauce


  1. In a large bowl, mix the cubed chuck roast, Coke, and bourbon. Cover the bowl with plastic wrap or a lid and let it marinate overnight in the fridge.

  2. Preheat your smoker to 250°F (120°C).

  3. Remove the beef from the marinade mixture and pat it dry with paper towels.

  4. In a small bowl, mix the salt, black pepper, smoked paprika, garlic powder, and onion powder. Season the meat with the mixture, making sure to coat evenly.

  5. Place the meat on the smoker and smoke for 4 hours, or until it reaches an internal temperature of 165°F (75°C).

  6. Take a large foil pan and place the smoked beef inside. Add the beef tallow and BBQ sauce, then mix everything together.

  7. Cover the pan with foil and continue cooking for another 45 minutes or until the internal temperature reaches 205°F (96°C).

  8. Remove from the smoker and let it rest for 10 minutes.

  9. Serve with your favorite sides and enjoy!


Adjust the spices and seasonings to your taste, and for an extra kick, you can add some hot sauce or chili flakes. Don't skimp on cooking time as it's important for the flavors to develop and for the meat to become tender.
