INGREDIENTS
- 1.5 lbs. boneless, skinless chicken thighs
- 3 chipotle peppers in adobo sauce
- 2 tablespoons adobo sauce
- 1 teaspoon cumin powder
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 tablespoons olive oil
- 2 tablespoons fresh lime juice
- Salt and black pepper, to taste
DIRECTIONS

Rinse and pat dry the chicken thighs with paper towels.

In a blender or food processor, blend the chipotle peppers, adobo sauce, cumin, smoked paprika, garlic powder, onion powder, olive oil, and fresh lime juice until smooth.

Place the chicken thighs in a resealable plastic bag or in a large bowl and pour the chipotle marinade over the chicken, making sure to coat all the chicken pieces well.

Marinate the chicken thighs in the refrigerator for at least 2 hours, or overnight for best results.

Preheat the grill to medium-high heat (around 375°F).

Remove the chicken thighs from the marinade, shaking off any excess marinade.

Season the chicken with salt and black pepper on both sides.

Place the chicken on the hot grill grates and grill for 7-8 minutes on each side or until the internal temperature of the thighs reaches 165°F.
