INGREDIENTS

  • 4 boneless, skinless chicken breasts
  • 1/2 cup chorizo, crumbled or finely chopped
  • 1/2 cup grated cheddar cheese
  • 1/2 cup breadcrumbs
  • 1 tablespoon olive oil
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh oregano, chopped
  • Salt and black pepper, to taste

DIRECTIONS

  1. Preheat the oven to 375°F.

  2. In a skillet over medium heat, cook the chorizo for 5-6 minutes or until it's browned and crispy. Set aside to cool.

  3. Butterfly the chicken breasts by slicing them horizontally, but not all the way through, to create a pocket for the stuffing.

  4. In a bowl, combine the cooled chorizo and cheddar cheese. Divide the mixture evenly among the chicken breasts, spooning it into the pocket.

  5. Use toothpicks to secure the chicken breasts by pushing them through the sides of the breasts to keep the filling inside.

  6. Season both sides of the chicken breasts with salt and black pepper.

  7. In a shallow dish, mix the breadcrumbs, olive oil, parsley, oregano, salt, and black pepper.

  8. Coat each stuffed chicken breast in the breadcrumb mixture, pressing the breadcrumbs lightly onto the chicken to help them stick.

  9. Place the chicken on a baking sheet lined with parchment paper and bake for 25-30 minutes or until the internal temperature of the chicken reaches 165°F.

  10. Once the chicken is cooked, remove the toothpicks and let it rest for a few minutes before serving.
