INGREDIENTS

  • 2 skinless cod fillets
  • 1 cucumber
  • 1 red onion
  • 1 tomato
  • 1 pepper (yellow)
  • Fresh pineapple
  • Salt
  • Pepper
  • Olive oil
  • Fresh parsley
  • Dried parsley
  • 20 slices streaky bacon
  • 200ml white wine
  • Lemon juice

DIRECTIONS

  1. Cut the cucumber, red onion, tomato, pepper and fresh pineapple into small pieces and put them in a medium-sized bowl.

  2. Season the vegetables with salt and pepper and pour in about two tablespoons of olive oil. Garnish with 10-15 leaves of parsley and mix well.

  3. Set about 5 slices of streaky bacon (depending on the size of your fillets) on a flat surface, close to each other. Then, add about two more slices, just crossed halfway over the first slices.

  4. Place one fillet in the middle and season it with salt, pepper and a pinch of dried parsley. Start covering the fillet with bacon, making sure it is closed inside. Repeat with the other fillet.

  5. Heat up a tablespoon of olive oil in a pan set on medium heat. When the pan is hot, place the two cod fillets wrapped in bacon on one side and start frying. Change sides when the bacon is a nice brown color, and make sure it is well cooked on each side (should take 3-4 minutes on each side).

  6. Pour in 200 ml of white wine, and when the wine starts to reduce, your fish is ready.

  7. Cut the fillets into thick slices. Drizzle with lemon juice. Serve hot with the side salad. Enjoy!
