Cheese Stuffed Smoked Meatloaf

  • 1 lb ground beef
  • 1/2 onion, diced
  • 1/2 cup panko bread crumbs
  • 1/2 cup heavy cream
  • 1 egg, beaten
  • 1 tbsp chipotle in adobo sauce
  • BBQ rub
  • Mozzarella cheese


  1. In a large bowl, combine ground beef, diced onion, panko bread crumbs, heavy cream, beaten egg, and chipotle in adobo sauce. Mix until well combined.

  2. Form half of the meat mixture into a rectangular shape on a sheet of wax paper. Place slices of mozzarella cheese on top, leaving a small border around the edges.

  3. Shape the remaining meat mixture into a rectangle and place it on top of the cheese layer, pressing the edges together to seal in the cheese.

  4. Season the stuffed meatloaf with your favorite BBQ rub.

  5. Preheat your smoker to 225°F (107°C) and smoke the meatloaf for approximately 1 hour and 30 minutes, or until it reaches an internal temperature of 160°F (71°C).

  6. Remove the Cheese Stuffed Smoked Meatloaf from the smoker, let it rest for a few minutes, then slice and serve. Enjoy!
