INGREDIENTS
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 150g mushrooms, chopped
- 2 sticks celeriac, thinly sliced
- 1 tsp cumin
- 1 tsp oregano
- Salt and pepper, to taste
- 3 bell peppers, halved and seeds removed
- 3 thin beef steaks, cubed
- 200g cheddar cheese, grated
- 150g ricotta cheese
- Fresh coriander, chopped
- Dried parsley
DIRECTIONS

In a bowl, mix together the grated cheddar cheese, ricotta cheese, chopped coriander, and a pinch of dried parsley. Set aside.

Heat a tablespoon of oil in a pan over medium heat. Add the chopped onion and minced garlic, sautéing until softened.

Add the chopped mushrooms and sliced celeriac to the pan, stirring to combine. Season with cumin, oregano, salt, and pepper.

Add the cubed beef to the pan and cook until browned and cooked through. Remove from heat and set aside.

Spoon a layer of the cheese mixture into the bottom of each bell pepper half.

Fill each pepper with the beef and vegetable mixture, then top with another layer of the cheese blend.

Sprinkle the stuffed peppers with additional grated cheddar cheese.

Place the peppers in a pan with the cheese side up and cover with a lid or another pan. Cook over medium heat for 25 minutes.

Remove the Stuffed Peppers from the heat and garnish with fresh parsley before serving. Enjoy!
