INGREDIENTS

  • 150g basmati rice
  • 1 ginger
  • 1 red onion
  • 3 chilli
  • 1 green pepper
  • 1 tomato
  • 4 white fish fillets (cod skinless)
  • 50g tomato puree
  • 1tsp curry powder
  • 1tsp turmeric
  • 1tsp cumin
  • 150ml vegetable stock
  • 200ml coconut milk

DIRECTIONS

  1. Cook the basmati rice in a medium-sized pot with salted water (1 teaspoon of salt) for about 15 minutes on medium heat.

  2. Chop half of the ginger, the full red onion, and about 4-5 cloves of garlic into small pieces. Slice the three chillies into rings. Cut the tomato into medium-sized pieces and the green pepper into long strips.

  3. Heat a tablespoon of oil in a pan over medium heat. Add the chopped garlic, onion, and ginger, and sauté until they turn a beautiful brown color (remember to stir).

  4. Add the tomatoes to the pan and season with a tablespoon of curry powder, a pinch of chilli flakes, turmeric, and cumin.

  5. Pour in 150ml of vegetable stock and add a large spoonful of tomato puree. Let it boil for 5 minutes before adding the tomato, green pepper, and chilli.

  6. After a few minutes, pour in 200ml of coconut milk and season with a teaspoon of salt.

  7. Cut the cod fillets into medium-sized pieces and add them to the pan. Cook for another 6 minutes on lower heat.

  8. Your fish curry is ready to serve! Remember to garnish with a slice of lime, a few chilli rings, and fresh parsley. Enjoy your delicious Fish Curry with basmati rice.
