INGREDIENTS

  • 600g potatoes, thinly sliced
  • 4 cloves garlic, minced
  • 1 red onion, thinly sliced
  • 250ml heavy cream
  • 200ml milk
  • Salt, pepper, and chili flakes, to taste
  • Zest of 1 lemon
  • 1 tsp thyme
  • 2 tsp wholegrain mustard
  • 150g parmesan cheese, grated
  • 200g streaky bacon
  • Fresh parsley, chopped

DIRECTIONS

  1. In a large bowl, combine the sliced potatoes, minced garlic, lemon zest, thyme, wholegrain mustard, salt, pepper, chili flakes, heavy cream, and milk. Mix well to coat the potatoes evenly.

  2. In a pan over medium heat, cook the streaky bacon until crispy. Remove from the pan and chop into small pieces.

  3. Begin layering the potatoes in a large, greased pan or oven-safe dish, overlapping them slightly. Sprinkle half of the chopped onion and bacon over the first layer of potatoes, followed by a handful of grated parmesan cheese.

  4. Add another layer of potatoes, then top with the remaining onion and bacon. Finish with the rest of the grated parmesan cheese.

  5. If cooking on the stovetop, cover the pan with a lid or another pan and cook over medium heat for 50 minutes. If using an oven, preheat to 170°C (340°F) and bake for 45 minutes, uncovered.

  6. Once cooked, garnish the Scalloped Potatoes with chopped fresh parsley and serve warm. Enjoy!

Use a large, oven-safe pan if baking in the oven.
