INGREDIENTS
- 200g flour
- 2 eggs
- 200g mushrooms, chopped
- 2 shallots, thinly sliced
- Garlic, chopped
- Thyme
- 100g parmesan, grated
- 50g ricotta
- Fresh parsley, chopped
- Salt and pepper, to taste
- 150ml double cream
DIRECTIONS

On a flat surface, pour 200g flour and create a well in the center. Add two cracked eggs and begin mixing until a solid dough forms. Shape into a ball and set aside to rest.

In a pan over medium heat, sauté thinly sliced shallots, chopped garlic, and thyme. Add chopped mushrooms and cook until softened.

Stir in grated parmesan, ricotta, and chopped fresh parsley. Mix well, then remove from heat and set aside.

Bring a pot of salted water to a boil. Meanwhile, roll out the dough on a floured surface until very thin.

Place spoonfuls of the mushroom mixture onto the dough, spacing them evenly apart. Fold the dough over the filling and press the edges together with a fork to seal.

Cut out the ravioli and repeat the process until all the dough is used.

Boil the ravioli for a few minutes until they float to the surface, then remove with a slotted spoon.

In a frying pan, sauté the remaining shallots and garlic in oil. Add the double cream, parmesan, salt, pepper, and fresh parsley, stirring to combine.
