INGREDIENTS

  • 4 cloves garlic
  • 2 peppers (one white, one red)
  • 1 onion (one white, one red)
  • 1 chili
  • 1 tsp sweet paprika
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp marjoram
  • 400g beef mince
  • 2 eggs
  • 30 slices streaky bacon
  • 100g cheddar cheese
  • 100g mozzarella cheese
  • 100g ricotta cheese
  • 1 handful spinach
  • Fresh parsley to garnish

DIRECTIONS

  1. Chop the onions, garlic, peppers, and chili into small pieces.

  2. In a pan over medium heat, add a tablespoon of oil and sauté the onion and garlic until brown.

  3. Add the peppers and chili, then season with sweet paprika, salt, pepper, and marjoram. Fry for a few minutes, stirring occasionally, then remove from the pan and set aside.

  4. In a large bowl, mix the beef mince with the eggs, salt, pepper, and spices using your hands.

  5. In another bowl, combine the grated mozzarella and cheddar cheeses, ricotta, onion mixture, and spinach.

  6. Prepare a 30cm x 15cm x 10cm deep baking tray by arranging half-length bacon slices around it. Divide the beef mince into two equal parts.

  7. Press one half of the mince into the bottom of the tray, creating a well for the cheese mixture. Add the cheese mixture and cover with the remaining mince.

  8. Close the meatloaf by covering it with the remaining bacon slices. Make sure the meatloaf is not too high in the tray to avoid burning.

  9. Bake at 180°C (350°F) for 45 minutes. Garnish with fresh parsley before serving. Enjoy!
