Steak Fajita Pinwheels

INGREDIENTS

  • 1 pound flank steak
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1/2 onion, thinly sliced
  • 1/2 cup shredded cheddar cheese
  • 3 tablespoons finely chopped pickled jalapeños
  • 2 tablespoons finely chopped pickled jalapeños
  • 1 tablespoon lime juice
  • 1 clove garlic, minced
  • Salt and pepper, to taste
  • 1 package refrigerated pizza dough

DIRECTIONS

  1. Preheat the oven to 400 degrees Fahrenheit.

  2. Season the flank steak with salt and pepper to taste.

  3. In a large skillet, heat the olive oil over high heat.

  4. Sear the steak for 2-3 minutes on each side or until browned.

  5. Transfer the steak to a cutting board and let it rest for 5 minutes before cutting it into thin strips.

  6. In the same skillet used to cook the steak, add the bell peppers and onions and sauté until they are tender.

  7. Roll out the pizza dough onto a floured surface and top it with the sautéed veggies, steak strips, shredded cheddar cheese, and finely chopped pickled jalapeños.

  8. Roll up the pizza dough into a log, starting at the end closest to you, and slice it into 12 even pieces.

  9. Place the pinwheels on a parchment-lined baking sheet and bake for 20-25 minutes or until golden brown.

  10. While the pinwheels are baking, make the jalapeño sauce. In a mixing bowl, combine the mayonnaise, finely chopped pickled jalapeños, lime juice, minced garlic, salt, and pepper.

  11. Mix until well combined.

  12. Once the pinwheels are baked, remove them from the oven and let them cool for 5-10 minutes before serving with the jalapeño sauce for dipping. Enjoy!

Notes

The recipe can be made ahead of time and refrigerated until ready to bake.
