Lebanese Sfeeha (Meat Pies)

INGREDIENTS

  • 500g Beef mince (traditionally with Lamb)
  • 1 Tomato, diced
  • 1 Onion, diced finely
  • 4 Garlic cloves, finely chopped
  • 1 Bunch Parsley, finely chopped
  • 1 tsp Allspice
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 4 pieces Lebanese flat bread (khobz)
  • 1 Garlic clove, finely chopped
  • 1/2 Lemon, Juiced
  • 1 tbsp Olive Oil
  • Hot Sauce

DIRECTIONS

  1.   Fill the charcoal basket half full, add 2 natural firelighters, and light. Leave the grill open for 10 mins before closing and opening all vents. Set up the cooking system, for this cook we will prepare the Firehawk Kamado Grill for direct cooking. Add the cooking rack, and both cooking grates. Once the grill has reached 250°F set top vent between 3 and close lower vents all of the way. This is your desired cooking temperature.

  2. Prepare your minced meat mixture by adding the meat, onion, garlic, parsley, tomato, salt, allspice and black pepper to a food processor and blending to a fine mixture, alternatively mix thoroughly with your hands.

  3. Place a handful of the meat filling in the center of each Lebanese flat bread and push towards the edges, covering the entire flatbread.

  4. Add the Lebanese Sfeeha to the grill plate for around 10 mins. Once ready, remove from the grill and slice in quarters.

  5. In a small bowl add the chopped garlic, olive oil, lemon juice and hot sauce and whisk until emulsified. Pour over the Lebanese Sfeeha.

Notes

For a quick and easy Sfeeha, use pre-made Lebanese flatbread as the base, and adjust the seasoning to your taste for a personalized flavor.
