INGREDIENTS

  • 3-4 pounds beef short ribs
  • 3-4 cups beef broth (enough to cover the meat)
  • 12 Guajillo Chile pods (deseed)
  • 1 Ancho Chile pod (deseed)
  • 1 red onion
  • 2 garlic cloves
  • 1 tsp Coriander
  • 1 tsp Black peppercorns
  • 1 tsp ground cumin
  • 1 tsp Mexican oregano
  • 1 star anise
  • 2-3 Bay leaves
  • 2 cinnamon sticks
  • 3.7 oz chipotles in Adobo sauce
  • 6 tomatoes
  • Salt to taste

DIRECTIONS

  1. Sear the beef cubes in a hot pan until browned on all sides, then transfer them to the pressure cooker.

  2. Add beef broth, Guajillo and Ancho Chile pods, red onion, garlic cloves, coriander, black peppercorns, ground cumin, Mexican oregano, star anise, bay leaves, cinnamon sticks, chipotles in Adobo sauce, tomatoes, and salt to the pressure cooker with the beef.

  3. Cook the ingredients in the pressure cooker for about 90 minutes on medium heat.

  4. Remove the meat from the pressure cooker and shred it using two forks.

  5. Discard the cinnamon sticks, star anise, and skin of garlic from the pressure cooker.

  6. Transfer the remaining ingredients from the pressure cooker to a blender and blend until smooth. Add more beef broth if needed to achieve the desired consistency for the consommé.

  7. Serve the shredded beef in tacos and enjoy dipping them into the flavorful consommé.
